I'm trying to connect to a Cassandra 3.11.3 cluster and getting and error
with the 1.2 JDBC driver which ships with Aqua Data Studio. Looks like like
it's trying to connect using Thrift instead of the native protocol.
Is there an way to replace the driver with or modify a setting to get it to
connect natively?

Not able to reproduce the issue with Cassandra 3.7. Will try with Cassandra 3.11.
I also can't reproduce the issue from MacOS 10.13.6, connecting to Cassandra 3.11.

We do not support a native protocol at this time. We only support thrift. This will be changed when we update ADS to handle Cassandra 4.0 in issue #15586. In the meantime, for Cassandra 3.11, you can activate RPC in your server to use ADS.
